Earth to Consumers Can you hear me?

The earth is giving us a wake-up call, the alarm bell is ringing loud and clear. The good news is it is so easy to help counter the climate crisis, save the earth and help animals – three times a day, every time you pick up your fork and choose scrumptious vegan fare.

Here is a recipe to save the earth from the new “Veganza Animal Hero” book. Courage the mermaid is the first vegan mermaid super hero, and this is her favorite recipe.

Courage’s Kale Sea Salad with Lemon Tahini Dressing

Ingredients

• Fresh Kale - 5 big leaves

• Romaine lettuce - 5 big leaves

• A palmful of frozen peas

• Approximately ½ of an English cucumber

• Baby tomatoes, sliced in half

Dressing

• 3 tablespoons of tahini

• 3 tablespoons of lemon juice, freshly squeezed

• 2 ½ tablespoons of vegan creamer

• A tablespoon of water

• A sprinkling of garlic powder

• 1 1/2 green onions

Preparation

1. Chop and mix all vegetables in a glass bowl.

2. Blend together the dressing ingredients and taste; add nutritional yeast, pepper or more lemon as needed.

3. Toss all together in a glass bowl.

4. Sprinkle nori seaweed pieces on top of the white dressing.
